Beets – A good source of vitamins and minerals including iron, folate, and potassium. Also a great source of fiber. (Note: Beets also contain FODMAPs, short chain carbohydrates that can cause digestive upset in some people who are sensitive.)
Strawberries – High in vitamin C and antioxidants.
Celery – High in vitamin K and potassium.
Apple – A great source of soluble fiber and vitamin C.
Lemon – High in vitamin C and citric acid which helps the body absorb plant based (aka non-heme) iron.
Ginger – Gingerol is an antioxidant found in ginger with known anti-inflammatory properties.
