One Pot Autumn Dinner

1 turkey thigh or 4-6 chicken thighs
1 Delicata squash, trimmed, seeds removed, sliced
1 red onion, sliced
1 apple, sliced
1 cup fresh cranberries
4-5 garlic cloves, minced
2 tbs fresh rosemary, minced
3 tsp salt
2 tbs extra virgin olive oil

Season the thigh with salt. Brown it on both sides in a tablespoon of oil.

Once brown remove it from the pan to rest on a plate.

Add a little more oil to the pan. Throw in the vegetables, garlic, rosemary, apples and cranberries. Stir it all up. Sauté everything until it starts to become fragrant.

Place the thigh on top of the vegetable mix and place the pan into a 400F oven for 20 minutes or until an internal thermometer reads 165 degrees.

-1½ lbs. boneless, skinless chicken thighs or bre

-1½ lbs. boneless, skinless chicken thighs or breasts
-3 cloves garlic, minced
- 2 tsp. ground cumin
- 1 tsp. ground coriander
- 1½ tsp. Smoked paprika
- ½ tsp. turmeric
- 1 tsp. Sea salt
- black pepper
- olive oil
- Juice of ½ lemon
- red onion, thinly sliced lengthwise
- 2 bell peppers, sliced in strips
- romaine lettuce, chopped
- grape or cherry tomatoes, halved
- 1 small cucumber, diced
- Handful of chopped, fresh cilantro
- Limes
- Some kind of dressing. We used lemon tahini
- Rice, cooked

Place the chicken in a bowl. Add all the spices, a little olive oil, and the lemon juice. Massage it in. Then cover it and let it chill in fridge for an hour.

Preheat your oven to 375. Place chicken with any extra marinade on half a sheet pan. On the other half of the pan put the peppers and onions. Drizzle with olive oil. Bake for about 20 minutes. Check the chicken. Turn it over and bake another 10 minutes if needed.

In a bowl, put a scoop of rice, top with sliced chicken and the peppers/onions. Set out lettuce, tomatoes, cucumber, cilantro, and limes for people to make their own.

Serve with dressing.

Tahini Lemon Dressing: 1/3 cup tahini, juice of one lemon, pepper and salt to taste. Whisk until well blended.
